Blogging our restaurant opening

I'm currently taking a recipe break and posting about opening the restaurant opening over on the Guardian/Observer Word of Mouth Blog ... some great feedback so far, please feel free to add to comments or comment here ... Mat

ps Bagged loads of Elderflowers today and will post a recipe once I've tried it !

Try adding another fruit to the elderflowers when making cordial: strawbs; pomegranate; passion fruit etc.. A fantastic soft drink for your bar with good gp!! When are you opening? AM very excited! Hope Heather doing well!

Please, please, please not chunky chips. Otherwise menu looks very good indeed. Also I like a good (i.e. proper English) but light ale before (and sometimes with) a meal, as do many of my friends, so get your wine friend to help on that. Oh and get the bread and butter right - extremely important.

Mat, Just back from dorset - don't think you will have affected the elderflowers this year - never seen so many. If you get a good 'champagne' brew going, that would be good! Matt

Mat, as you know, very proud of you. As for elderflowers, I'm picking some this week to make a load of champagne. Just back with a few mackerel, crab and a duck is roasting in the oven, stuffed with sage and rhubarb, cheers David

Hi Mat, loved watching you on MC, hope the restaurant is a huge success, you deserve it. Unfortunately I won't be able to visit and sample your creations because I now live in Spain. But hey you never know I might be able to get to you one of these days on a rare visit to UK.
